What is vitamin B12 all about?<\/strong><\/span><\/h4>\n

Hardly any other vitamin is better known for its possible deficiencies than vitamin B12. There is a very simple reason for this: many people are affected. It is often said that vegans and vegetarians in particular have a vitamin B12 deficiency, but people who eat a varied and balanced diet can also be affected. Your body cannot produce vitamin B12 itself, so you have to get it from outside – for example through food. <\/span><\/p>\n

But let’s start at the very beginning. Vitamin B12 is not actually a single vitamin, but a whole group of vitamins known as cobalamins. Vitamin B12 is produced by microorganisms. Plants cannot produce vitamin B12 themselves. If they nevertheless contain small amounts of the vitamin, this is because the microorganisms required for this have colonized their surface. <\/span><\/p>\n

The situation is different with meat. In ruminants in particular, but also in other mammals, the vitamin B12-producing microorganisms are found in the stomach. From there, the vitamin B12 is distributed throughout the animal’s body into the tissue and even passes into the milk. If we eat the meat of these animals – or consume their milk – we also absorb the vitamin B12. Fish in turn absorb vitamin B12 by eating unicellular marine plants or plankton on which vitamin B12-producing bacteria are found. This means that fish can also be rich in vitamin B12. <\/span><\/p>\n

But the big problem is that even though some foods have a high vitamin B12 content, a large proportion of the vitamin is unfortunately lost during frying or cooking. Vitamin B12 is one of the heat-sensitive vitamins. It is assumed that around 25 to 35% of the vitamin is lost during the preparation of products containing vitamin B12. This in turn explains why a vitamin B12 deficiency can occur even with a varied diet. <\/span><\/p>\n
